How about Morpheus' story? How he gets out of the Matrix, his quest to find Neo (the prophesy of The One), his first visit to the growing vats, and what he did to become so loved by all the Zionites. I'm sure that there are three more movies worth of material there.

Ack, as you can see from Animatrix (prequels) and Matrix comics (side stories). There is a lot of material.
