I suppose the most likely scenario is that the previous Ones live out their lives and die from old age. Around that time, the Oracle introduces herself to the Zionists, who had never heard of her before. From that point on, her shell is programmed to mimic the effects of age so that she appears to age right along with everyone else. Although I wonder what she tells people when they offer to give her the red pill and free her from the Matrix.
